In the heart of Provence in the Nice hinterland between Cannes and Grasse, it is in Opio that you will discover one of the largest oil mills in the region. For 7 generations, the Moulin d’Opio has belonged to the Michel family. In 1848, it was Mr. Authion who took over this centuries-old establishment. The wheel of the traditional mill powered by water from the Brague turns quietly as time passes, until the day when Mr. Roger Michel inherits this business. He decides to shake up habits by installing a more productive traditional mill. Despite the great frost of 1956, which decimated practically all the surrounding olive groves, this mill continued thanks to the will of its owners. While the other colleagues closed their doors, it was the love and passion for the milling profession that allowed the Michel family to continue crushing olives from producers in the Mediterranean basin. The commitment to Mediterranean flavors and their attachment to the terroir has brought the Michel family to notoriety in the olive sector. When Roger Michel's daughter, Christine, took over this family business, she in turn decided to expand the mill with modern facilities.
